Knowing that my family loves sweet pork and that I love slow cooking, my sister recommended a simple sweet pork recipe that she swore was as good as any restaurant. So, I put it to the test and…it is DELICIOUS.
All you need is a pork roast, a jar of salsa and some brown sugar; throw it in the slow cooker for 6 to 8 hours and you are done! Of course, I tweaked it, but I am still so surprised at how easy and tasty this recipe turned out. The original recipe called for a full cup of brown sugar, but I prefer a more savory meat, so I just used a scant half-cup. The sweetness was perfect and the tomato salsa added some nice tangy spice.
The entire meal in itself was a deal. I found a 10- to 12-pound pork loin at Walmart for a little over $20 and cut it into four pieces to use for different meals. I bought a half gallon of salsa from Winco for $3.98. I went to Rita’s Bakery in Ogden and bought fresh-baked corn tortillas.
If you’ve never been to Rita’s, you can find the tortillas in a cooler near the front of the store. They are made fresh daily and are an absolute steal at 25 for $1.49. If you have never tasted a fresh corn tortilla, you are missing out. I can never resist eating one or two of the warm tortillas on the way home.
For convenience, while I was at Rita’s, I bought an avocado, jalapeño, onion, lime, cilantro and tomatoes for some fresh toppings to accompany the tacos. The sweet pork tacos were absolutely delicious, and best of all, the whole meal cost me under $10. For $10, I was able to create a delicious meal with enough food to easily serve at least 6 people.
I think that the meal and the bargain are GREAT! For leftovers, the pork is terrific on rice or on a salad, and the tangy pork juices make for a perfect salad dressing. If you like, you can substitute chicken or beef for the pork. If you’re hungry for something different and you’re on a budget, I recommend that you try these sweet pork tacos. I am sure you and your family will enjoy them!
Mexican Sweet Pork Roast
- 2- to 3-pound pork roast
- 16 ounces of your favorite salsa
- ½ cup brown sugar or more if you like
Combine all the ingredients and slow cook on low for 6-8 hours. Serve with flour or corn tortillas top with your favorite taco toppings.
